Quartzite is a natural rock. Quartz is a manufactured product. The names being almost identical is the whole problem. Quartzite is metamorphic — sandstone compressed and heated over geological time — and scores 7–8 on the Mohs scale, harder than granite. Engineered quartz is roughly 90% ground natural quartz bound with polymer resin, scoring about 7. The practical difference is heat and sealing: quartzite takes a hot pan directly, while quartz resin begins to scorch above about 300°F (150°C). Quartz is non-porous and never needs sealing; quartzite is porous and needs sealing on installation and periodically after.

Why the confusion is expensive
A buyer who asks for “quartz” and receives quartzite has bought a porous stone that needs sealing and will stain if they treat it like the non-porous surface they thought they were getting. A buyer who asks for quartzite and receives quartz has bought something that cannot take the hot pan they were promised.
Both mistakes are common, and neither shows up until months later. Ask the fabricator which one you are buying, in those words, and get it in writing.
Heat is the clearest separator
Quartzite’s hardness and heat tolerance both come from being rock. There is no resin to soften, so a pan straight off the hob is survivable.
Engineered quartz is mostly stone by weight, but the small fraction of polymer holding it together is the weak point. Above roughly 300°F that resin scorches, and the mark is permanent — it is not a stain on the surface, it is damage to the binder.

Which suits a table
For a dining table, quartz is usually the sensible answer: non-porous, no sealing, no etching from wine or lemon, and the pattern consistency means a large top looks deliberate rather than patchy.
For a table that lives outdoors or in strong sun, quartzite. Engineered quartz can discolour under prolonged UV; quartzite is stable.
